Plantains Foster

Ingredients:

  • 1 ripe plantain

  • 1/4 cup light brown sugar

  • 3 tbsp unsalted butter

  • 1 tsp cinnamon powder

  • 1 tsp vanilla extract

  • 1/3 cup coconut rum

  • pinch of salt

  • Vanilla Bean Ice Cream

Instructions:

1.         Slice the plantains diagonally into about 1/2-inch-thick pieces.

2.         Melt Butter and sugar on medium low heat

3.         Once the butter is melted, add the light brown sugar, vanilla extract and cinnamon. Stir well to combine.

4.         Allow the butter and sugar mixture to cook, stirring occasionally, about 3-5 minutes.

5.         Carefully add the sliced plantains to the skillet. Let it cook for 5 minutes on each side

6.         Once the plantains are coated with the sauce and heated through, turn the heat off. Pour in the coconut rum and turn the heat on to high. Carefully ignite the alcohol with a blow torch or lighter. Be cautious and keep your face away from the flames.

7.         Allow the flames to subside naturally as the alcohol burns off. This process should take less than a minute or two.

8.         Once the flames have died down, spoon the plantains and sauce over scoops of vanilla ice cream in a bowl

9.         Garnish with chopped nuts or mint if desired. Serve immediately while the plantain foster is still warm and the ice cream begins to melt slightly.
