Lemon & Herb Chicken
One of my favorite chicken recipes! I’ve made this lemon & herb chicken for weeks straight for meal prep lol. Hope you guys enjoy this recipe just as much as I do.
Ingredients for chicken:
4 chicken thighs
1/2 tbsp paprika
1 tsp poultry seasoning
1/2 tsp black pepper
1/4tsp cayenne pepper
1/2 tbsp pink Himalayan salt
1 tsp Chicken bouillon powder
1 tbsp garlic powder
1 tbsp onion powder
Zest of two lemons
1/2 tbsp thyme, chopped
1/2 tbsp rosemary, chopped
1/4 cup olive oil
2 sprigs of Thyme and Rosemary to place on top of the chicken
Lemon Butter Sauce:
4 tbsp unsalted butter
1 garlic clove, minced
2 1/2 tbsp fresh lemon juice
1 tbsp parsley, chopped
Instructions:
Marinate:
In a bowl, place chicken thighs and add olive oil to the chicken. Add paprika, poultry seasoning, black pepper, cayenne pepper, pink salt, chicken bouillon powder, garlic powder and onion powder. Zest two lemons and add the lemon zest to the chicken. Add in chopped thyme and rosemary. Massage well. Massage all the ingredients into the chicken thoroughly. Cover with plastic wrap and let the chicken marinate for 1 hour.
Cooking:
Preheat your oven to 350 degrees
Take the chicken out of the refrigerator and place the chicken thighs in a cast iron skillet. Place sprigs of thyme and rosemary over the chicken and cover the skillet with foil. Bake for 30 minutes and after 30 minutes you can base the chicken with its juices. Cover the skillet with the foil and bake for another 30 minutes. Turn your oven to broil, remove the foil, and base the chicken again. Allow the chicken to broil for 3-5 minutes. This will help the skin crisp up and give the chicken more color. If you want more color, you can broil the chicken a little longer but be sure to keep an eye on it because the food can burn quickly.
Lemon Butter Sauce.
While the chicken is cooking, you can prepare the sauce. Over medium-low heat, melt the butter and saute the garlic for 2-3 minutes. Add in the lemon juice and cook for another minute. Once the sauce is finished cooking you can turn off the heat and pour the sauce over the chicken.
Serve:
Sprinkle the chicken with parsley and enjoy. You can also add sliced lemons for garnish to the top of the chicken. Serve the chicken hot. Enjoy your delicious lemon and herb chicken!
